This Tofu Scramble is an ode to a vegan classic that I eat all the time. Out of all the vegan dishes that I know and love this is probably the one that I have made and ate the most out of all of them. Making a good tofu scramble is kind of like a vegan rite of passage. Everyone must so it and if you’re going to do it, you may as do it well. It’s easy, it’s satisfying it’s good hot AND cold, It’s high in protein and low in carbohydrates, it’s easy to customize… Tofu Scramble has kind of got it going on… Enjoy this gift from me to you… My most repeated recipe!

This Tofu Scramble is an ode to a vegan classic that I eat all the time. Instructions
  1. Open the tofu package and drain off the excess liquid. Crumble tofu into a dish and set aside.
  2. Dice the pepper, onions and garlic. Heat a frying pan on the stove on medium-high and add the onions and salt. Sweat the onions until they are translucent. Then add the garlic and cook for a few minutes, then add the pepper and continue cooking until they begin to soften.
  3. Add the tofu and the turmeric and mix the ingredients in the pan with a wooden spoon until the turmeric nicely coats the tofu. Keep cooking until you can smell the aroma of the turmeric (you will have to be actively stirring it at this point so the tofu doesn't stick and burn. If it is feeling like it is on too high, turn the heat down a little).
  4. Finally, add in your lemon juice, tamari and spinach and continue to saute until the spinach has just become wilty.
  5. Remove from the heat and serve.
