Chef Jack Middleton

Red Seal Certified Chef in Hamilton, ON

For all of his adult life (the better part of a decade), Chef Jack Middleton has been cooking professionally. He attended the Chef Training program at George Brown College in Toronto and completed his 5000-hour apprenticeship at Quatrefoil Restaurant in Dundas ON. He became a Red Seal Certified Chef in 2013 and has continued to grow his skills and passion for cooking since.

Towards the end of 2015, Jack weighed approximately 250lbs and despite his fine-dining background, was subsisting on fast food and pizza. He briefly went on a low-calorie diet and lost 50lbs in a short period of time. Despite the liberation of his weight-loss success, he knew that this kind of lifestyle was not sustainable. During that time his mentor introduced him to the lectures of Gary Yourofsky and films such as Earthlings and Cowspiracy. He realized the way he was eating was harming himself, the planet and other sentient beings and he decided to make a change. Instead of seeing the (meat-based) low-calorie diet to completion, he went vegan on January 1st, 2016 and proceeded to lose another 40lbs in the 8 months following without restricting his diet and without counting calories.

I started The Empowered Vegan to teach people how to step into a plant-based lifestyle with that same ease and abundance. It’s now my mission to show people that veganism is not a sacrifice, it’s a liberation.

Casey Peters is the Head Chef of Catering for The Empowered Vegan and is a well-established chef in the Hamilton area who has a passion for farm-to-table eating and experimenting in the kitchen. When he’s not researching how to expand his culinary knowledge or creating new and exciting ferments and pickles, you can find him in the garden. Casey is an avid gardener who appreciates the connection between the seasons and his plate. Casey is also a master of all things catering. With years of experience working in excellent kitchens and having spent time managing one of the top catering companies in the city, he is now bringing everything he has to offer as a partner in the catering branch of The Empowered Vegan.
