Indian Spiced Basmati Rice
This is a simple and tasty recipe to make perfect Indian Spiced Basmati Rice. This rice is the perfect side to any Indian gravy dishes such as Tofu "Butter Chicken", Masoor Dhal, or Baingan Bharta. Enjoy!
Rinse rice in a strainer and soak in cold water for 20-30 minutes. Drain the rice off and set aside.
Dice the onion and set aside.
Place a pot on the stove on med-high heat and add your dried spices to it. Toast the spices until they become fragrant. Next, add in your oil, onions and salt and saute until the onions are translucent.
Add your rice and water to the pan and turn the heat up to high. Bring the rice to a boil, drop it to a simmer and cover with a lid. Immediately set a timer and check after 15 minutes. Note: if there is still liquid in the bottom of the pan after 15 minutes then remove the lid and continue cooking for another minute (or until the liquid has evaporated).
When the bottom of the pan is dry, remove the pan from the heat and set aside. If you took the lid off to let the liquid evaporate then put the lid back on and let the rice rest for 20 minutes.
When ready to serve, use a fork to fluff the rice.
